- 8 ounces elbow macaroni
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced red bell pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Cook the elbow macaroni according to package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the mayonnaise, sour cream, lime juice, chili powder, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
- Add the cooled macaroni, corn, diced red bell pepper, and chopped cilantro to the bowl. Stir until everything is well coated with the dressing.
- If using, gently fold in the crumbled feta cheese.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the dressing.
- You can substitute the elbow macaroni with any pasta shape you prefer, such as rotini or penne, for a different texture.
