Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1 cup ranch dressing
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, cheddar cheese, and crumbled bacon.
  3. Pour the ranch dressing over the pasta and vegetable mixture. Stir gently until everything is evenly coated.
  4. Season with salt and pepper to taste.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, sprinkle with fresh parsley for garnish.
