Description
A delicious and creamy pasta salad made with rotini pasta, fresh vegetables, cheddar cheese, bacon, and ranch dressing, perfect for any gathering or as a side dish.

- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon
- 1 cup ranch dressing
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, cheddar cheese, and crumbled bacon.
- Pour the ranch dressing over the pasta and vegetable mixture. Stir gently until everything is evenly coated.
- Season with salt and pepper to taste.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, sprinkle with fresh parsley for garnish.
Notes
- For a healthier version, substitute whole wheat pasta and Greek yogurt for half of the ranch dressing.
- Add in diced avocado or black olives for extra flavor and texture.
