Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. In a large bowl, season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning. Drizzle with olive oil and toss to coat evenly.
  3. Place the seasoned chicken breasts in the prepared baking dish in a single layer.
  4. In a separate bowl, mix together the heavy cream, Parmesan cheese, and half of the mozzarella cheese until well combined. Pour this mixture over the chicken in the baking dish.
  5. Scatter the chopped spinach and halved cherry tomatoes over the top of the chicken and cream mixture.
  6. Sprinkle the remaining mozzarella cheese evenly over the top.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  9. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.
