- 2 pounds boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 cup fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a large bowl, season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning. Drizzle with olive oil and toss to coat evenly.
- Place the seasoned chicken breasts in the prepared baking dish in a single layer.
- In a separate bowl, mix together the heavy cream, Parmesan cheese, and half of the mozzarella cheese until well combined. Pour this mixture over the chicken in the baking dish.
- Scatter the chopped spinach and halved cherry tomatoes over the top of the chicken and cream mixture.
- Sprinkle the remaining mozzarella cheese evenly over the top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.

- For a lower-carb option, substitute the heavy cream with unsweetened almond milk and use a low-carb cheese blend.
