- 8 ounces rotini pasta
- 1 cup cooked chicken, shredded
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, shredded chicken, diced avocado, cherry tomatoes, red onion, and cilantro.
- In a separate small bowl, mix together the Greek yogurt, mayonnaise, lime juice, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and gently toss until everything is well coated.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
