- 2 slices of multigrain bread
- 1 ripe avocado
- 2 ounces of softened cream cheese
- 1 cup of grated sharp cheddar cheese
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Optional: 1 teaspoon of onion powder or chili flakes
Instructions
- Preheat a skillet over medium heat.
- Lightly toast the multigrain bread until golden.
- Mash the ripe avocado in a bowl and season with salt, pepper, and optional spices.
- Spread cream cheese on one side of each slice of toasted bread.
- On one slice, layer the mashed avocado and grated cheddar cheese.
- Top with the other slice of bread, cream cheese side down.
- Drizzle olive oil in the skillet and place the sandwich inside, pressing down slightly.
- Cook for 4-5 minutes until golden brown and cheese starts to ooze.
- Flip the sandwich and cook for another 4-5 minutes until both sides are toasted and cheese is melted.
- Remove from skillet, let rest for a minute, then slice in half to serve.
Notes
- For added crunch, consider adding crispy lettuce or thinly sliced cucumbers.
- For a lighter version, use reduced-fat cream cheese and cheese alternatives.
