Description

Creamy Asiago Chicken and Gnocchi is a delightful dish featuring tender chicken, pillowy gnocchi, and a rich, creamy sauce made with Asiago cheese and fresh spinach.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Asiago cheese
  • 1 teaspoon dried Italian seasoning
  • 1 pound potato gnocchi
  • 2 cups fresh spinach
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  4. Stir in the heavy cream, Asiago cheese, and Italian seasoning. Cook for 2-3 minutes until the cheese is melted and the sauce is creamy.
  5. Add the gnocchi to the skillet and stir to coat in the sauce. Cook for about 3-4 minutes until the gnocchi are tender and heated through.
  6. Stir in the fresh spinach and cooked chicken, cooking until the spinach is wilted, about 2 minutes.
  7. Serve hot, garnished with chopped parsley.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
