Ingredients

- 4 large hard-boiled eggs, chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup green onions, sliced
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon fresh dill, chopped (optional)
- 4 slices whole grain bread (optional, for serving)
Instructions
- In a large mixing bowl, combine the cottage cheese, chopped hard-boiled eggs, mayonnaise, Dijon mustard, green onions, garlic powder, salt, and pepper.
- Gently fold the ingredients together until well mixed. If using fresh dill, add it at this stage and mix again.
- Taste and adjust seasoning if necessary.
- For best flavor, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the egg salad on whole grain bread or enjoy it on its own as a light meal or snack.
Notes
- For a creamier texture, blend the cottage cheese in a food processor before mixing it with the other ingredients.
