- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 2 tablespoons brewed coffee (cooled)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- In a separate bowl, mix the softened cream cheese and brewed coffee until smooth.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Fold in the cream cheese mixture until evenly distributed. If using, fold in the chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, try adding a teaspoon of instant coffee granules to the dough.
- To make these cookies even more decadent, drizzle melted chocolate over the cooled cookies before serving.
