A delicious and crunchy granola inspired by coffee cake, perfect for breakfast or a snack.

- 3 cups old-fashioned rolled oats
- 1 cup chopped nuts (such as pecans or walnuts)
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup coconut oil, melted (or vegetable oil)
- 1/4 cup maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips (optional)
- 1/2 cup dried fruit (such as cranberries or raisins, optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped nuts, brown sugar, granulated sugar, cinnamon, and salt. Stir until well mixed.
- In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until combined.
- Pour the wet ingredients over the dry ingredients and mix until the oats and nuts are evenly coated.
- Spread the granola mixture evenly on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let the granola cool completely on the baking sheet. It will become crunchy as it cools.
- Once cooled, stir in the mini chocolate chips and dried fruit if using. Store in an airtight container at room temperature.
Notes
- For a gluten-free version, use certified gluten-free oats.
- Experiment with different nuts or seeds, such as almonds or pumpkin seeds, to customize the flavor and texture.
