Description

A quick and tasty recipe for a classic chicken salad sandwich, perfect for lunch or a light dinner.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup sweet pickle relish
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slices of whole grain bread
  • Lettuce leaves (optional)
  • Tomato slices (optional)

Instructions

  1. In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined.
  2. Add the chopped celery, red onion, sweet pickle relish, garlic powder, salt, and pepper. Stir until all ingredients are evenly incorporated.
  3. Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.
  4. Chill the chicken salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. To assemble the sandwiches, place a generous scoop of the chicken salad on a slice of whole grain bread. Top with lettuce and tomato slices if desired, then cover with another slice of bread.
  6. Cut the sandwich in half and serve immediately, or wrap it up for later.

Notes

  • For a crunchier texture, add chopped walnuts or sliced almonds to the chicken salad.
  • Substitute the chicken with canned tuna or chickpeas for a different flavor profile.
