A delicious and hearty Chicken Fajita Rice Casserole that combines tender chicken, colorful vegetables, and flavorful spices, all baked to perfection.

- 2 cups cooked white rice
- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 1 bell pepper (any color), sliced
- 2 cloves garlic, minced
- 1 packet (1 ounce) fajita seasoning mix
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and half of the fajita seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add the sliced onion, bell pepper, and minced garlic to the skillet. Sauté for another 3-4 minutes until the vegetables are tender.
- In a large mixing bowl, combine the cooked rice, black beans, corn, salsa, and the remaining fajita seasoning. Stir until well combined.
- Add the cooked chicken and vegetable mixture to the bowl and mix everything together.
- Transfer the mixture to a greased 9×13-inch baking dish. Spread it out evenly and top with shredded cheddar cheese.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
Notes
- For a spicier kick, add diced jalapeños or use spicy salsa.
- Substitute quinoa or brown rice for a healthier grain option. You can also use leftover rotisserie chicken for a quicker preparation.
