Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shredded chicken to the skillet and season with salt and pepper. Cook until heated through.
  3. Place a tortilla in the skillet and sprinkle half of it with cheese, chicken, and a spoonful of salsa.
  4. Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown, about 3-4 minutes per side.
  5. Repeat with the remaining tortillas and filling.
  6. Cut each quesadilla into wedges and serve with sour cream and additional salsa on the side.
