- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1/2 cup salsa
- 1/4 cup sour cream
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shredded chicken to the skillet and season with salt and pepper. Cook until heated through.
- Place a tortilla in the skillet and sprinkle half of it with cheese, chicken, and a spoonful of salsa.
- Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown, about 3-4 minutes per side.
- Repeat with the remaining tortillas and filling.
- Cut each quesadilla into wedges and serve with sour cream and additional salsa on the side.

- You can add vegetables like bell peppers or onions for extra flavor.
- Use a non-stick skillet to prevent sticking.
