Ingredients

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup romaine lettuce, chopped
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup BBQ sauce (your favorite brand)
  • 1/4 cup ranch dressing
  • Salt and pepper to taste
  • Optional: tortilla chips for topping

Instructions

  1. In a large mixing bowl, combine the shredded chicken, corn, black beans, cherry tomatoes, cheddar cheese, romaine lettuce, and red onion.
  2. Drizzle the BBQ sauce over the salad mixture and gently toss until everything is well coated.
  3. Add the ranch dressing and toss again to combine. Season with salt and pepper to taste.
  4. Serve immediately, or chill in the refrigerator for about 30 minutes to let the flavors meld.
