Ingredients

- 2 cups cooked chicken, shredded or diced
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 cup romaine lettuce, chopped
- 1/2 cup red onion, thinly sliced
- 1/2 cup BBQ sauce (your favorite brand)
- 1/4 cup ranch dressing
- Salt and pepper to taste
- Optional: tortilla chips for topping
Instructions
- In a large mixing bowl, combine the shredded chicken, corn, black beans, cherry tomatoes, cheddar cheese, romaine lettuce, and red onion.
- Drizzle the BBQ sauce over the salad mixture and gently toss until everything is well coated.
- Add the ranch dressing and toss again to combine. Season with salt and pepper to taste.
- Serve immediately, or chill in the refrigerator for about 30 minutes to let the flavors meld.
- If desired, top with crushed tortilla chips for added crunch before serving.

- For a lighter version, substitute Greek yogurt for the ranch dressing.
