Description

BBQ Chicken and Roasted Sweet Potato Bowls are a delicious and nutritious meal featuring tender chicken, roasted sweet potatoes, and fresh toppings.


Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 1 pound boneless, skinless chicken breasts
  • 1 cup your favorite BBQ sauce
  • 1 cup corn kernels (canned or frozen)
  • 1 cup black beans, rinsed and drained
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cubed sweet potatoes with olive oil, smoked paprika, onion powder, salt, and pepper. Toss until coated.
  3. Spread the sweet potatoes evenly on the prepared baking sheet and roast for 25-30 minutes, stirring halfway through.
  4. While the sweet potatoes are baking, season the chicken breasts with salt and pepper. Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
  5. Remove the chicken from heat and shred it using two forks.
  6. In a separate bowl, combine the shredded chicken with BBQ sauce, mixing until well coated.
  7. Once the sweet potatoes are done, layer them in serving bowls with BBQ chicken, corn, black beans, and diced avocado.
  8. Top with fresh cilantro if desired and serve with lime wedges on the side.

Notes

  • For an extra kick, consider marinating the chicken in BBQ sauce for at least 30 minutes prior to cooking.
  • You can swap in quinoa or brown rice for a more filling base in your bowls.
