Ingredients
Scale
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1 tablespoon extra virgin olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- Salt and freshly ground black pepper to taste
- 1 pound boneless, skinless chicken breasts
- 1 cup your favorite BBQ sauce
- 1 cup corn kernels (canned or frozen)
- 1 cup black beans, rinsed and drained
- 1 ripe avocado, diced
- 1/4 cup fresh cilantro, chopped (optional)
- Lime wedges for serving
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cubed sweet potatoes with olive oil, smoked paprika, onion powder, salt, and pepper. Toss until coated.
- Spread the sweet potatoes evenly on the prepared baking sheet and roast for 25-30 minutes, stirring halfway through.
- While the sweet potatoes are baking, season the chicken breasts with salt and pepper. Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
- Remove the chicken from heat and shred it using two forks.
- In a separate bowl, combine the shredded chicken with BBQ sauce, mixing until well coated.
- Once the sweet potatoes are done, layer them in serving bowls with BBQ chicken, corn, black beans, and diced avocado.
- Top with fresh cilantro if desired and serve with lime wedges on the side.
Notes
- For an extra kick, consider marinating the chicken in BBQ sauce for at least 30 minutes prior to cooking.
- You can swap in quinoa or brown rice for a more filling base in your bowls.
