Description

A delicious and flavorful Bang Bang Chicken Bowl featuring tender chicken, fresh vegetables, and a spicy sauce served over jasmine rice.


Ingredients

  • 2 cups cooked jasmine rice
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 avocado, sliced
  • 1/2 cup green onions, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon lime juice

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
  2. While the chicken is cooking, prepare the sauce by combining mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl. Mix well until smooth.
  3. Once the chicken is cooked, remove it from the heat and toss it with half of the sauce.
  4. To assemble the bowls, divide the cooked jasmine rice among four bowls. Top each bowl with the sauced chicken, shredded carrots, sliced cucumbers, avocado, and chopped green onions.
  5. Drizzle the remaining sauce over the top of each bowl. Serve immediately and enjoy!

Notes

  • For a healthier option, substitute brown rice or quinoa for the jasmine rice.
