A delicious and flavorful Bang Bang Chicken Bowl featuring tender chicken, fresh vegetables, and a spicy sauce served over jasmine rice.

- 2 cups cooked jasmine rice
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 1 avocado, sliced
- 1/2 cup green onions, chopped
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon lime juice
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
- While the chicken is cooking, prepare the sauce by combining mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl. Mix well until smooth.
- Once the chicken is cooked, remove it from the heat and toss it with half of the sauce.
- To assemble the bowls, divide the cooked jasmine rice among four bowls. Top each bowl with the sauced chicken, shredded carrots, sliced cucumbers, avocado, and chopped green onions.
- Drizzle the remaining sauce over the top of each bowl. Serve immediately and enjoy!
Notes
- For a healthier option, substitute brown rice or quinoa for the jasmine rice.
- Add your favorite vegetables such as bell peppers or snap peas for extra crunch and nutrition.
